塩尻市産ピノ・ノワール使用

M.D. ヴィンヤードは長野県塩尻市片丘に位置する海抜720mの西向き傾斜の圃場で、八ヶ岳と御岳山の火山灰堆積礫土壌でリースリング、ピノノワール、シャルドネを栽培しています。

2025年産ピノ・ノワールは９月中旬に収穫後ワイナリーにて除梗し４℃の低温で７日間浸漬した後、果実の上澄み液だけを発酵させました。MLF（乳酸発酵）をしていないのでキリリとした酸味が特徴。新鮮なサクランボ風味が活きた軽快な辛口ロゼワインです。

M.D. Vineyard is located in Kataoka, Shiojiri City, Nagano, at an elevation of 720 metres on a west-facing slope. The vineyard is planted on gravelly soils derived from volcanic ash from Mt. Yatsugatake and Mt. Ontake, where Riesling, Pinot Noir and Chardonnay are cultivated.

The 2025 Pinot Noir was harvested in mid-September. After destemming at the winery, the grapes underwent seven days of maceration at 4°C, after which only the free-run juice was fermented.

Malolactic fermentation was not carried out, resulting in a crisp and lively acidity.

A light and dry rosé, it shows fresh cherry-like fruit character with a bright, refreshing style.
